Did someone say healthy snacks? I love to snack. It’s a habit I have kept since working multiple jobs and going to University. Finding the right snack (and portion size) though can be tricky, so I have developed an easy- to- make, healthy snack option– Cocoa & Chia Balls!

As delicious as they are, try and stick to one a day. You will find that these balls are rich in fibre and protein, gluten and dairy free with no added sugar, however excess consumption can be high in overall energy. Variety is the key! Enjoy making these Cocoa & Chia Balls to have as a morning or afternoon snack!

Ingredients

For mixture

  • 12 medjool dates (soaked)
  • 1 cup hazelnut or almond meal
  • 1 tbs chia seeds
  • ½ cup desiccated coconut
  • 2 tbs coconut oil
  • ¼ cup Gluten Free Cereal (preferably one containing fruits and seeds)
  • 3 tbs cocoa powder

For coating

  • 1 cup Gluten Free Cereal
  • 2 tbs pumpkin seeds
  • 2 tbs desiccated coconut

 

 

Method

Step 1
Soak dates in a medium bowl with water for 45 minutes. Drain water and discard seeds (may need to manually remove any remaining seeds)

Step 2
Add all ‘mixture’ ingredients into a food processor and process until blended. Texture should be mostly smooth and formed.

Step 3
Rest mixture in bowl for 15 minutes to allow chia seeds to expand

Step 4
Whilst mixture is resting, combine all ‘coating’ ingredients and add into a food processor. Process long enough for the larger cereal items to break down slightly (5 seconds). The aim is to still have a textured coating, not powder-like. Set aside in a small bowl.

Step 5
Now it’s time to start rolling! Wet hands with warm water and roll balls evenly (mixture should make 10 balls)

Step 6
Generously roll in ‘coating’ mixture, and firmly press any coating not sticking to the ball. A textured coating is the goal here!

Step 7
Once all balls have been coated, place in the fridge and let the set for 30 minutes.

Step 8
Transfer to a plate or an airtight container and leave in the fridge as a healthy, dairy free, gluten free, vegan, no added sugar snack!

 

For added protein, add additional nuts and seeds, or peanut butter.
