I have the biggest sweet tooth and whenever I can, I love to create simple, delicious treats that satisfy my sweet cravings but are also nutritious!

Chickpeas are an excellent source of protein, fibre and vitmains/minerals. They can be used in soups and curries, sauces and stews. I wanted to help broaden their versatility to desserts as well! I hope you enjoy cooking with chickpeas as much as i do!

Ingredients

Dry ingredients:

  • 85 g of Gluten Free Plain Flour (just over ½ cup)
  • 1/3 cup cacoa powder
  • ½ tsp baking soda
  • ½ tsp baking powder
  • sprinkle of salt

Wet Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 1/3 cup maple syrup
  • 1 cup homemade applesauce (I peeled and stewed 1 granny smith apple))
  • 3 tbs coconut oil
  • 3 tsp vanilla essence

Topping:

  • 65g sugar free dark chocolate, chopped
Method

Step 1
Preheat oven to 180c . Either line with baking paper or grease a 8x8 baking tin. Set aside

Step 2
Add all dry ingredients to a medium-sized bowl and mix together. Set aside

Step 3
Add all wet ingredients to a food processor and blend together until all is combined, smooth

Step 4
Empty the contents from the food processor and combine with the dry ingredients. Ensure all is mixed together well.

Step 5
Place the combined mixture into the baking tin, and sprinkle the chopped dark chocolate over the top and gently pat them in

Step 6
Bake for 20-30 minutes approximately, or until testing skewer comes out clean

Step 7
Remove from oven, place on cooling rack until completely cool. Then place in the fridge in an air -tight container.

Step 8
Enjoy with coconut yoghurt and fresh berries!
