Now, I am no Wonton- making expert, however my husband loves Wonton Soup so over the years I have made my own to include more vegetables into the mixture. Garlic and ginger are so rich in nutrients that not only help combat the common cold, but improve our overall immune system. The flavours of this dish are bold, and I usually add fresh chilli for added heat and nutritional goodness. HINT: I usually make my soup 12 hours in advance in order to let all the ingredients combine further before adding my wontons and serving. Trust me – this dish packs a punch!

For the Wontons:
Step 1
In a large pot, add all ingredients for the soup. Cover and bring to the boil. Once boiled, reduce heat to low, and simmer for 15minutes. Turn off heat and let soup rest.
Step 2
In a medium mixing bowl, combine all the ingredients for the wonton filling. Mix well with a spoon until all wet ingredients have been combined.
Step 3
Now lets start to assemble the wontons!
Step 4
Place 1 wonton wrapper either on the chopping board on in your hand and, using your fingertip, lightly brush the edges with water. Place 1 teaspoon of mixture into the centre of the wonton, and fold in half to make a triangle shape. Seal the mixture in by pinching the edges together tightly with your fingers.
Step 5
Return the soup to heat and bring to the boil. Once boiled, remove the solid ingredients from the soup and add the wontons!
Step 6
Cook, uncovered for 10 minutes or until wontons are cooked and are floating to the surface.
** Consider making the soup 12 hours in advance in order to let all the ingredients combine further before adding the wontons and serving.
