Banana Bread… **insert drool emoji here**! My go-to when i need to create a healthy Vegan/Vegetarian dessert.  I have perfected this recipe over the years to include more fibre, crunch and flavour, and now it is ready to be shared with you all!  It can be eaten as a breakfast option, or a nutritious snack. Its so filling! I hope you enjoy making and eating it as much as I do!!

Serves 10

Ingredients
  • 4 medium sized ripe bananas, sliced
  • ¼ cup brown sugar
  • ½ cup vegetable oil, or coconut oil
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • 1tsp vanilla extract
  • 3 tbs pumpkin seeds
  • 1 ½ cups of wholemeal flour, plain
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 3 tbs pumpkin seeds (additional)
METHOD

Step 1
Preheat oven to 180C

Step 2
Line a Baking Tray (23cmx12cm) with baking paper, or grease entire inside of tray with spray oil or coconut oil

Step 3
In a large bowl, add bananas and brown sugar. Puree with a hand mixer until well combined

Step 4
Add in oil, sugar, cinnamon, nutmeg, vanilla extract and pumpkin seeds. Mix well

Step 5
Sift flour, baking powder and baking soda into the bowl containing the combined wet ingredients. Mix together

 

Step 6
Add wet mixture into the baking tray. Sprinkle the additional pumpkin seeds on top before putting the tray into the oven. Cook for 25minutes

Step 7
Check if cake is cooked through by inserting a metal skewer into the centre. If it comes out dry, the cake can be removed from the oven

Step 8
Rest on the bench on top of a wire rack until it has cooled down

 

Serve warm with plain yoghurt, or cooled down as a healthy on-the-go snack!
